How can I create a custom text with countdown only, no reboot or installs? I would like to use it to remind people of certain event without the option to close

I assume you mean:

Show a popup with a countdown to when the installation will start without the option to close the popup or stop the countdown.

Alas, PSADT does not do this.

You could try to create one.
someone did try years ago here but I have not looked at it
